Chicken and Meat KerutukIngredients

 

 

 

250gm Adabi Krutuk Powder
600ml/gm or 3 cups Cooking Oil
90-100pcs or 2500gm Chicken or Beef or Mutton
250gm or 10 tablespoons "Kerisik" (Dessicated Coconut Paste)
1500ml or 71/2 cups Coconut Milk (31/2 nos)
30-35 cloves Shallots (Ingredient A Blend)
15 cloves Garlic (Ingredient A Blend)
3-5 inches Ginger (Ingredient B Blend)
15 cloves Garlic (Ingredient B Blend)
3-5 inches Galangal (Ingredient B Blend)
10 sticks Lemongrass (pounded)
400gm or 11/2 tablespoons Brown Sugar or Sugar (suit to taste)
50gm (3 teaspoons) ASAM JAWA X-tra Adabi Paste
or 3 teaspoons Seeded Tamarind paste (suit to taste)
1500ml or 71/2 cups Water
Salt to taste

 

 

 

Cooking Method1. Mix Adabi Kerutuk Powder and Ingredients A with water to become paste.2. Heat the oil in cooking pot.3. Saute Ingredient B and pounded lemongrass until fragrant and slightly yellowish colour.4. Add in Kerutuk paste and saute until fragrant and slightly brown color gently approximately 10 to 15 minutes.5. Pour in chicken or meat, desiccated coconut paste, coconut milk, tamarind paste, water, brown sugar and salt to taste.6. Cook until thick.7. Ready to serve.
