600ml/gm or 3 cups | Cooking Oil |
250gm | Seafood and Salted Fish Curry Powder Adabi |
1000gm/450 nos. | Shallots (Crushed or Blend) |
15 nos. | Garlic (Crushed or Blend) |
8 nos. | Onion>(Slices) |
4 cups(880ml) | Coconut Milk |
10gm (1 teaspoon) | Adabi Tamarind Paste |
or 3 teaspoons | Seeded Tamarind |
5500ml (28 cups) | Water |
6-8 nos. | Tomatoes |
10cm | Cinnamon Stick |
10 stripes | Curry Leaf |
Salt and Seasoning to taste |
Cooking Method1. Heat the cooking oil in a braising pan or cooking pot.2. Saute the cinnamon stick, sliced garlic, onion and curry leaf until fragrant and turns into golden color.3. Then, put in the curry paste and saute it gently until its become slightly brown,(Cautions: Slightly saute the paste gently approximately around 15-20 minutes)4. Pour in the remain amount of water, 1 cup of diluted tamarind and seafood. Boil around 10-15 minutes.5. After that, add the coconut milk, tomatoes, salt and seasoning to taste. Reduce to a lightly thickened consistency for another 20-30 minutes, ready to serve.
